We're deeply passionate about spirits, not just drinking them but learning about their stories, enjoying new flavours, and talking to the people who craft them.

This excitement is what led us to create The Heart Cut – to share this sense of adventure with you. The Heart Cut is a single-cask and small-batch spirits company, releasing one-off bottlings from distilleries across the world.

From small innovative producers in unexpected locations to internationally renowned brands, each cask has been picked in collaboration with a partner distillery from a far-flung place. With each one, we hope to tell a tale - one of people, provenance and the pursuit of crafting distinctive flavours through the art of production. We won’t bombard you with technical jargon, rather we’ll let you in on why we adore each distillery we pair with and what makes their spirits truly special in taste and character. 

And the best part? We keep things fresh by unveiling new bottlings frequently throughout the year, with the hope that along the way you discover new distilleries, new flavours, and new bottles to add to your home bar - both from us and from that distillery.

While we’re interested in every spirit type, it's hard to miss our fondness for whisky, especially from newly emerged whisky-making countries.

Think Australia, India, Israel, Denmark, Finland, and England – countries that might not be your first thought for whisky, but they'll surely become your top picks after we expand your horizons. These distilleries are crafting their own style; unbound by tradition they’re throwing the rulebook out the door and creating a spirit character with a curious ‘what if we tried this?’ mentality.

And as for our name…

During distillation, spirit runs off the final still in three phases, called the heads, heart and tails. To separate between the three stages, distillers keep a close eye on the spirit run and will make a ‘cut’ between each phase, resulting in the heads and tails (sometimes called the foreshots and feints) ending up in one vessel, and the prized heart cut in another.

Why? Because as distillation occurs different flavour compounds are carried through at different times, based on their volatility (something we’re not going to go into here…but we will in a future blog post). And the heart cut is the cherished cut that carries all the desirable flavours that the distiller is looking for to create that distillery’s character.

To us, The Heart Cut represents the distillation of collective decades of working in the spirits (and, specifically, whisky) industry, and showcasing to the world everything we love about it. We’re here to share our passion for spirits, for travelling to distilleries and learning not just about what they’re making but the community they’ve built up around them, and for the camaraderie that comes with sipping on spirits with others - whether that be at the bar or at home with friends.
